4 medium russet potatoes
1 cup spinach, chopped
1 cup shredded cheese (cheddar or mozzarella)
2 tablespoons olive oil
Salt and pepper, to taste
1/4 teaspoon garlic powder (optional)
Preheat oven to 400°F (200°C). Pierce potatoes with a fork. Rub with olive oil, salt, and pepper.
