This Crimson Cozy Roll is a festive red velvet cake roll filled with rich cream cheese frosting. Light, fluffy, and decadent, it’s the perfect centerpiece dessert for holiday gatherings, Valentine’s Day, or any heartwarming celebration!
For the Cake:
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
4 large eggs
3/4 cup granulated sugar
1/4 cup buttermilk
1 tsp vanilla extract
1 tsp red food coloring
For the Cream Cheese Filling:
8 oz cream cheese, softened
4 tbsp unsalted butter, softened
1 cup powdered sugar
1 tsp vanilla extract
Make the cake: Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment and lightly grease.
In a bowl, sift together flour, cocoa powder, baking powder, and salt.
In a large bowl, beat eggs and sugar until thick and pale. Mix in buttermilk, vanilla, and red food coloring. Gradually fold in dry ingredients until just combined.
Bake: Pour batter into prepared pan and spread evenly. Bake 10-12 minutes, or until cake springs back when lightly touched.
Roll the cake: While hot, invert cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment. Starting at a short end, roll the cake up with the towel. Let cool completely.
Make filling: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until fluffy.
Assemble: Gently unroll the cake. Spread cream cheese filling evenly over the surface. Re-roll the cake without the towel.
Chill & serve: Wrap in plastic and refrigerate at least 1 hour before slicing. Dust with powdered sugar or drizzle with white chocolate if desired.
For extra flair, sprinkle crushed candy canes or red sprinkles on top.
The roll can be made a day in advance and stored in the fridge.
