  • 1/2 cup cooked ham, diced

Instructions

Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil or non-stick spray.

2️⃣ In a bowl, whisk eggs. Season with salt and pepper.

3️⃣ Stir in ham, bell peppers, onion, and cheddar cheese.

4️⃣ Pour mixture evenly into muffin cups, filling each about 3/4 full.

5️⃣ Bake 18–20 minutes until eggs are set and tops are lightly golden.

6️⃣ Let cool slightly before serving.
