  • 2 cups rolled oats

  • 1/2 cup chopped nuts (such as walnuts or almonds)

  • 2 ripe bananas, mashed

  • 1 cup almond milk (or milk of your choice)

  • 1/4 cup honey or maple syrup

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1 cup mixed berries (fresh or frozen)

  • 1/4 cup raisins or dried cranberries

  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C).

  • In a large bowl, combine rolled oats, chopped nuts, baking powder, cinnamon, and salt.

  • In another bowl, whisk mashed bananas, almond milk, honey/maple syrup, and vanilla extract.

  • Pour wet mixture into dry ingredients and stir until fully combined.

  • Gently fold in berries and raisins/dried cranberries.

  • Pour mixture into a greased 9×9-inch baking dish and spread evenly.

  • Bake for 25–30 minutes until golden and set.

  • Let cool slightly and serve warm.

  • Use frozen berries without thawing to avoid excess moisture.

  • Substitute flaxseed meal for an extra fiber boost.
