These Luscious Cherry Lemon Cookies combine soft, buttery cookies filled with sweet cherry jam and finished with a tangy lemon glaze. Perfect for spring gatherings, holidays, or any time you want a bright, fruity treat!
For the Cookies:
1 cup unsalted butter, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup cherry jam
For the Lemon Glaze:
2 cups powdered sugar
2–3 tbsp lemon juice
Zest of 1 lemon
Yellow food coloring (optional)
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter and granulated sugar until light and fluffy.
Beat in eggs one at a time, then add vanilla extract.
In another bowl, whisk flour, baking soda, baking powder, and salt. Gradually mix into wet ingredients until just combined.
Drop rounded tablespoons of dough onto baking sheets, spacing about 2 inches apart.
Make an indentation in the center of each cookie using your thumb or the back of a spoon. Fill with a small amount of cherry jam.
Bake 10-12 minutes, until edges are lightly golden. Cool slightly on baking sheets, then transfer to wire racks to cool completely.
In a small bowl, whisk powdered sugar, lemon juice, and lemon zest until smooth. Add yellow food coloring if desired.
Drizzle glaze over cooled cookies. Let set before serving.
You can swap cherry jam for raspberry or strawberry jam if preferred.
Store in an airtight container at room temperature for up to 3 days.
