Luscious Cherry Lemon Cookies

These Luscious Cherry Lemon Cookies combine soft, buttery cookies filled with sweet cherry jam and finished with a tangy lemon glaze. Perfect for spring gatherings, holidays, or any time you want a bright, fruity treat!

For the Cookies:

  • 1 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 3/4 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup cherry jam

For the Lemon Glaze:

  • 2 cups powdered sugar

  • 23 tbsp lemon juice

  • Zest of 1 lemon

  • Yellow food coloring (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • In a large bowl, cream together butter and granulated sugar until light and fluffy.

  • Beat in eggs one at a time, then add vanilla extract.

  • In another bowl, whisk flour, baking soda, baking powder, and salt. Gradually mix into wet ingredients until just combined.

  • Drop rounded tablespoons of dough onto baking sheets, spacing about 2 inches apart.

  • Make an indentation in the center of each cookie using your thumb or the back of a spoon. Fill with a small amount of cherry jam.

  • Bake 10-12 minutes, until edges are lightly golden. Cool slightly on baking sheets, then transfer to wire racks to cool completely.

  • In a small bowl, whisk powdered sugar, lemon juice, and lemon zest until smooth. Add yellow food coloring if desired.

  • Drizzle glaze over cooled cookies. Let set before serving.

Notes

  • You can swap cherry jam for raspberry or strawberry jam if preferred.

  • Store in an airtight container at room temperature for up to 3 days.
