  • 800g firm-fleshed potatoes

  • 250g smoked sausage or mild chorizo, sliced

  • 1 onion, thinly sliced (optional)

  • 100g grated cheese (Emmental, Comté, or mozzarella)

  • 2 tablespoons olive oil

  • 1 teaspoon Herbes de Provence or mild paprika

  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Peel and cut potatoes into bite-sized pieces. Boil them for 5-7 minutes until just tender. Drain well.

  3. In a mixing bowl, toss the potatoes with olive oil, herbs, salt, and pepper.

  4. Spread the potatoes on a baking sheet or roasting dish. Scatter sliced sausage and onion (if using) evenly over the potatoes.

  5. Roast for 20-25 minutes until potatoes are golden and crispy, stirring halfway through.

  6. Sprinkle grated cheese over the top and roast for another 5-7 minutes until melted and bubbly.
