800g firm-fleshed potatoes
250g smoked sausage or mild chorizo, sliced
1 onion, thinly sliced (optional)

2 tablespoons olive oil
1 teaspoon Herbes de Provence or mild paprika
Salt and pepper, to taste
Preheat your oven to 400°F (200°C).
Peel and cut potatoes into bite-sized pieces. Boil them for 5-7 minutes until just tender. Drain well.
