These Spinach Stuffed Pastries are flaky, golden, and filled with a savory mix of spinach, ricotta, feta, and Parmesan. Perfect as an appetizer, snack, or light meal — a delicious way to enjoy puff pastry!

  • 1 sheet puff pastry, thawed

  • 2 cups fresh spinach, chopped

  • ½ cup ricotta cheese

  • ¼ cup feta cheese, crumbled

  • ¼ cup grated Parmesan cheese

  • 1 garlic clove, minced

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 1 egg (for egg wash)

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  • In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, about 30 seconds. Add spinach and cook until wilted. Remove from heat and let cool slightly.

  • In a bowl, mix the spinach, ricotta, feta, Parmesan, salt, and pepper until combined.

  • Roll out puff pastry and cut into squares. Place a spoonful of filling in the center of each.

  • Fold pastry over filling to form a triangle or rectangle; press edges to seal.

  • Brush tops with beaten egg.

  • Bake 20–25 minutes until golden brown. Serve warm.

Notes

  • Add a pinch of nutmeg or red pepper flakes for extra flavor.

  • Great served with a side of marinara or yogurt dip.

  • Can be made ahead and reheated in the oven.
