These Spinach Stuffed Pastries are flaky, golden, and filled with a savory mix of spinach, ricotta, feta, and Parmesan. Perfect as an appetizer, snack, or light meal — a delicious way to enjoy puff pastry!
1 sheet puff pastry, thawed
2 cups fresh spinach, chopped
½ cup ricotta cheese
¼ cup feta cheese, crumbled
¼ cup grated Parmesan cheese
1 garlic clove, minced
1 tablespoon olive oil
Salt and pepper, to taste
1 egg (for egg wash)
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant, about 30 seconds. Add spinach and cook until wilted. Remove from heat and let cool slightly.
In a bowl, mix the spinach, ricotta, feta, Parmesan, salt, and pepper until combined.
Roll out puff pastry and cut into squares. Place a spoonful of filling in the center of each.
Fold pastry over filling to form a triangle or rectangle; press edges to seal.
Brush tops with beaten egg.
Bake 20–25 minutes until golden brown. Serve warm.
