  • 1 cup mashed sweet potatoes

  • 1 cup crushed pineapple, drained

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ¼ teaspoon salt

Instructions

  • Preheat oven to 350°F (175°C). Grease a donut pan.

  • In a large bowl, mix mashed sweet potatoes, pineapple, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla until well combined.

  • In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  • Gradually stir dry ingredients into the wet mixture until just combined (do not overmix).

  • Spoon batter into the donut pan, filling each cavity about ⅔ full.

  • Bake for 15–18 minutes, or until a toothpick inserted comes out clean.

  • Cool in pan for a few minutes, then transfer to a wire rack to cool completely.
