Vegetable Stir-Fried Noodles

Quick, easy, and packed with flavor, these Vegetable Stir-Fried Noodles feature perfectly sautéed vegetables, tender noodles, and a savory garlic-soy sauce. A simple yet delicious dish that melts in your mouth with minimal effort!

  • 250g Chinese noodles or noodles of your choice

  • 1 zucchini, sliced

  • 2 carrots, sliced

  • 1 onion, thinly sliced

  • 2 tablespoons olive oil or sesame oil

  • 2 garlic cloves, minced

  • 3 tablespoons soy sauce

Instructions

  • Cook the noodles according to package instructions. Drain and set aside.

  • Heat oil in a large skillet or wok over medium-high heat.

  • Add garlic and onion, sauté for 2 minutes until fragrant.

  • Add carrots and zucchini, stir-fry until tender but still crisp, about 5 minutes.

  • Add cooked noodles to the pan. Pour soy sauce over everything and toss well to combine and heat through.

  • Serve hot, optionally garnished with sesame seeds or chopped green onions.
