250g Chinese noodles or noodles of your choice
1 zucchini, sliced
2 carrots, sliced
1 onion, thinly sliced
2 tablespoons olive oil or sesame oil
2 garlic cloves, minced
3 tablespoons soy sauce
Cook the noodles according to package instructions. Drain and set aside.
Heat oil in a large skillet or wok over medium-high heat.
Add garlic and onion, sauté for 2 minutes until fragrant.
Add carrots and zucchini, stir-fry until tender but still crisp, about 5 minutes.
Add cooked noodles to the pan. Pour soy sauce over everything and toss well to combine and heat through.
