Ingredients

Scale

Bread and Olive Oil Mixture

  • 1 large rustic bread or baguette, sliced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

Toppings and Garnishes

  • 1 cup feta cheese, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/3 cup mixed olives (Kalamata & green)
  • 1/2 cup roasted red peppers, sliced
  • 1/4 cup marinated artichoke hearts
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • Extra olive oil for drizzling

Instructions

  1. Preheat the oven: Set your oven to 200°C (400°F) to prepare it for toasting the bread.
  2. Prepare the olive oil mixture: In a small bowl, combine 3 tablespoons of olive oil with minced garlic, dried oregano, dried thyme, salt, and black pepper. Mix well to infuse the flavors.
  3. Brush the bread slices: Arrange the bread slices on a baking sheet and brush each slice generously with the olive oil and herb mixture ensuring even coverage.
  4. Toast the bread: Place the baking sheet in the preheated oven and bake for 8–10 minutes until the bread is golden brown and crisp.
  5. Arrange on serving board: Once toasted, place the bread slices on a large serving board or platter, spacing them for easy access.
  6. Add the toppings: Place crumbled feta cheese centrally or in small bowls on the board. Surround with halved cherry tomatoes, sliced cucumber, mixed olives, roasted red peppers, and marinated artichoke hearts.
  7. Garnish with herbs: Sprinkle fresh parsley and basil evenly over the bread and toppings for a fresh aroma and color contrast.
  8. Drizzle olive oil: Finish with a generous drizzle of extra olive oil over the feta and vegetables to add richness and enhance Mediterranean flavors.
  9. Serve: Serve immediately while the bread is still warm and crisp for the best texture and taste experience.

Notes

  • Feel free to add other Mediterranean ingredients like sun-dried tomatoes or roasted eggplant for more variety.
  • For a vegan version, substitute feta with a plant-based cheese alternative or omit entirely.
  • Serve with a side of hummus or tzatziki for additional dips.
  • Leftover bread can be toasted and stored, but assemble toppings just before serving to keep freshness.
  • Adjust seasoning and herbs based on personal taste preferences.
