Ingredients

Scale

For the Brie Bites:

  • 8 oz (225g) Brie cheese, cut into 1-inch cubes
  • ½ cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup sliced almonds
  • 2 tbsp unsalted butter, melted
  • Salt, a pinch

For the Raspberry Honey Glaze:

  • ½ cup fresh or frozen raspberries
  • 2 tbsp honey
  • 1 tsp lemon juice

For Garnish (optional):

  • Fresh thyme or mint leaves

Instructions

  1. Prepare the Almond Coating: Place the flour in a bowl and season with a pinch of salt. Beat the egg in a separate bowl. Place the sliced almonds in a third bowl. This setup will make coating the Brie cubes easier and more organized.
  2. Coat the Brie Cubes: Dredge each Brie cube first in the seasoned flour, ensuring it is fully covered. Then dip the floured Brie into the beaten egg, followed by pressing it firmly into the sliced almonds to coat all sides completely. Set coated cubes aside on a plate.
  3. Bake the Brie Bites: Preheat your oven to 375°F (190°C). Arrange the almond-coated Brie cubes on a baking sheet lined with parchment paper. Brush each piece lightly with melted butter to help them brown beautifully. Bake for 10 to 12 minutes until they turn golden and the Brie inside starts to melt slightly.
  4. Prepare the Raspberry Honey Glaze: While the Brie is baking, combine the raspberries, honey, and lemon juice in a small saucepan over medium heat. Allow the mixture to simmer for 3 to 5 minutes until the raspberries break down fully. Remove from heat and strain the mixture through a fine mesh sieve to create a smooth glaze.
  5. Assemble and Serve: Drizzle the warm raspberry honey glaze over the baked Brie bites. Garnish with fresh thyme or mint leaves if desired. Serve immediately while the Brie is warm and gooey for the best experience.

Notes

  • Use ripe but firm Brie cheese for easier cutting and better texture.
  • Make sure the almonds fully adhere to the Brie cubes to avoid falling off when dipping or baking.
  • The glaze can be made ahead and kept refrigerated; warm gently before serving.
  • For an extra touch, add a sprinkle of sea salt over the glaze just before serving.
  • These bites are best enjoyed fresh but can be reheated gently in the oven.
