This Garlic Butter Chicken Bites with Creamy Velveeta Parmesan Twisted Pasta recipe offers a delightful combination of tender, flavorful chicken and a rich, cheesy pasta sauce. Perfect for a comforting dinner, this dish balances smoky, garlicky chicken with a smooth, indulgent Velveeta and Parmesan cream sauce coating rotini pasta.

Ingredients

Scale

For the Chicken:

  • 2 lb chicken breast, cut into bite-sized pieces
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the Twisted Pasta:

  • 1 lb twisted pasta (rotini or fusilli)
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1½ cups heavy cream
  • 4 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ¾ cup grated Parmesan cheese
  • 4 oz cream cheese, cubed
  • Salt and black pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the twisted pasta and cook according to package instructions until tender yet still slightly firm to the bite. Drain and set aside.
  2. Season the Chicken: Place the bite-sized chicken pieces in a bowl. Sprinkle smoked paprika, onion powder, Italian seasoning, salt, and black pepper all over. Toss well to ensure even coating of the spices.
  3. Cook the Chicken: Heat a large skillet over medium-high heat and melt the butter. Add the minced garlic and cook for about 30 seconds until fragrant but not browned.
  4. Sear the Chicken Bites: Add the seasoned chicken to the skillet in a single layer. Cook for 4–5 minutes on each side until the chicken is golden brown and cooked through. Spoon the garlic butter over the chicken as it cooks to enhance the flavor. Transfer the cooked chicken to a plate and keep warm.
  5. Prepare the Creamy Sauce: In another large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until aromatic.
  6. Add the Cream: Pour in the heavy cream and gently stir as it begins to warm and lightly simmer, preparing the base for the cheese sauce.
  7. Melt the Cheeses: Add the Velveeta cheese cubes and cream cheese, stirring continuously until both are fully melted and the sauce is smooth and creamy.
  8. Finish the Sauce: Stir in the shredded mozzarella and grated Parmesan cheese. Keep mixing until the sauce thickens and becomes glossy. Season with salt and black pepper to your taste.
  9. Combine with Pasta: Add the cooked twisted pasta into the skillet with the cheese sauce. Toss gently until every spiral is thoroughly coated with the rich, creamy sauce.
  10. Serve: Plate the creamy Velveeta Parmesan pasta and top with garlic butter chicken bites, or serve the chicken on the side. Garnish with chopped fresh parsley and extra Parmesan cheese, if desired.

Notes

  • Use fresh garlic for the best flavor in both the chicken and the sauce.
  • Velveeta melts smoothly to create a creamy texture, but you can substitute with processed cheese for a similar effect.
  • Ensure not to overcook the pasta; al dente texture works best for holding the sauce.
  • Adjust seasoning with salt and pepper gradually to suit your taste preference.
  • Garnishing with parsley adds a fresh contrast and color to the rich dish.
  • Leftovers can be refrigerated for up to 2 days and reheated gently on the stove.
