For the Chicken Patties
- 1½ lbs ground chicken
- 2 tbsp olive oil (plus more for cooking)
- 2 cloves garlic, minced
- Zest of 1 large lemon
- 2 tbsp fresh lemon juice
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano
- ½ tsp smoked paprika
Fresh Herbs & Feta
- ¼ cup fresh parsley, finely chopped
- 2 tbsp fresh dill or basil, finely chopped
- ½ cup feta cheese, crumbled
For Serving (Optional)
- Lemon wedges
- Extra crumbled feta
- Greek yogurt or tzatziki
- Warm pita or rice
- Combine Ingredients: In a large bowl, gently mix ground chicken, olive oil, minced garlic, lemon zest, lemon juice, salt, black pepper, dried oregano, smoked paprika, fresh parsley, dill or basil, and crumbled feta until just combined to keep the patties tender.
- Form Patties: Shape the mixture into about 8 medium-sized patties, making sure they are uniform for even cooking.
- Heat Skillet: Preheat a skillet over medium heat and add a small drizzle of olive oil to prevent sticking.
- Cook Patties: Place the patties in the hot skillet and cook for 4–5 minutes on each side until they are golden brown and cooked through. Avoid pressing them down to maintain juiciness.
- Rest: Remove the cooked patties from the skillet and let them rest for 2 minutes to allow juices to redistribute.
- Serve: Serve warm with optional lemon wedges, extra crumbled feta, Greek yogurt or tzatziki, and either warm pita or rice for a complete Mediterranean meal.
Notes
- Do not overmix the chicken mixture to keep patties tender.
- If fresh dill is unavailable, substitute with fresh basil for a different but delightful flavor.
- Use olive oil with a high smoke point for cooking to avoid burning.
- These patties can be baked at 375°F (190°C) for 20-25 minutes as a healthier alternative.
- Leftover patties can be refrigerated for up to 3 days or frozen for up to 1 month.
