Lemon Rice:

  • 1 1/2 cups long-grain rice (300 g)
  • 3 cups vegetable or chicken broth (720 ml)
  • 1 tablespoon olive oil (15 ml)
  • Zest and juice of 1 lemon

Veggie Mix:

  • 1 can chickpeas, drained and rinsed (400 g / 14 oz)
  • 2 cups fresh spinach (60 g)
  • 1 cup cherry tomatoes, halved (150 g)
  • 2 cloves garlic, minced

Topping:

  • 1/2 cup crumbled feta (75 g)
  • Salt & black pepper, to taste

Instructions

  1. Cook the rice: In a medium saucepan, combine the rice, vegetable or chicken broth, and olive oil. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and fluffy.
  2. Add lemon flavor: Once the rice is cooked, fluff it with a fork and gently stir in the lemon zest and lemon juice to infuse a fresh citrus flavor.
  3. Sauté the vegetables and chickpeas: In a large skillet over medium heat, add the rinsed chickpeas, minced garlic, fresh spinach, and halved cherry tomatoes. Cook for 2–3 minutes, stirring occasionally, until the spinach wilts and the garlic is fragrant.
  4. Combine rice and veggie mix: Fold the cooked lemon rice into the skillet with the chickpeas and vegetables. Stir gently to combine all ingredients evenly and heat through.
  5. Season and serve: Season the mixture with salt and black pepper to taste. Transfer to serving dishes and sprinkle generously with crumbled feta cheese before serving.

  • For a vegan version, omit the feta or substitute with a plant-based cheese alternative.
  • If you prefer a stronger lemon taste, add additional lemon juice to taste after cooking.
