Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare Vegetables: In a large bowl, toss the cubed pumpkin and sweet potatoes with olive oil, salt, pepper, and cinnamon ensuring all pieces are evenly coated for balanced flavor.
  3. Roast Vegetables: Spread the seasoned vegetables evenly on the prepared baking sheet. Roast for 25 to 30 minutes, stirring halfway through to promote even cooking and caramelization until tender and lightly browned.
  4. Caramelize with Honey: During the last 5 minutes of roasting, drizzle honey over the vegetables and return to the oven to allow gentle caramelization, adding a sweet glaze to the dish.
