  • 2 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp black pepper

Whipped Feta

  • 1 cup feta cheese, crumbled
  • 3 tbsp cream cheese
  • 23 tbsp milk (or as needed for smoothness)
  • 1 tsp honey
  • ½ tsp lemon zest

Toppings & Garnish

  • ½ cup dried cranberries
  • ¼ cup toasted walnuts or pecans
  • Fresh rosemary or thyme sprigs
  • Optional: pomegranate seeds for extra color

For Serving

  • Crackers, toasted baguette slices, or flatbreads

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make for easy cleanup.
  2. Prepare Vegetables: In a large bowl, toss the peeled and cut beets and sweet potatoes with olive oil, sea salt, black pepper, and smoked paprika until fully coated.
  3. Roast Vegetables: Spread the vegetables evenly on the prepared baking sheet. Roast for 25–30 minutes, flipping halfway through to ensure even caramelization, until tender and slightly browned. Remove from oven and allow to cool slightly.
  4. Make Whipped Feta: In a food processor, combine crumbled feta, cream cheese, honey, and lemon zest. Blend while slowly adding 2 to 3 tablespoons of milk until the mixture is smooth and creamy. Taste and adjust seasoning as needed.
  5. Assemble Board: Spread the whipped feta either in a small bowl or directly on your serving board. Artistically arrange the roasted beets and sweet potatoes around the cheese.
  6. Add Toppings: Scatter dried cranberries, toasted walnuts or pecans, and fresh sprigs of rosemary or thyme over the vegetables. Optionally, sprinkle pomegranate seeds for an extra pop of color and festive flair.
  7. Serve: Present the board with a selection of crackers, toasted baguette slices, or flatbreads for guests to enjoy together.

Notes

  • You can substitute walnuts with pecans depending on your preference or what you have on hand.
  • For a vegan version, replace feta and cream cheese with plant-based alternatives and use maple syrup or agave instead of honey.
  • Make sure not to over-roast the vegetables to keep them tender but not mushy.
  • The whipped feta can be prepared a few hours ahead and refrigerated. Bring to room temperature before serving.
  • Pomegranate seeds are optional but add a beautiful bright color and crunchy texture.
