Ingredients

Scale

Golden Garlic Herb Chicken

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon unsalted butter

Cloud-Soft Mashed Potatoes

  • 800 g potatoes, peeled and cubed
  • 3 tablespoons unsalted butter
  • ½ cup warm milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garlic Butter Carrots

  • 3 cups carrots, peeled and sliced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Prepare Mashed Potatoes: Boil peeled and cubed potatoes in salted water for 15–20 minutes or until fork-tender. Drain thoroughly, then mash with butter, warm milk, salt, and black pepper until smooth and fluffy. Keep warm while preparing the rest of the meal.
  2. Cook Chicken: Season the chicken breasts or thighs with minced garlic, lemon zest and juice, dried thyme, dried rosemary, paprika, salt, and black pepper. Heat olive oil in a skillet over medium heat and cook the chicken for 5–6 minutes on each side until golden brown and fully cooked through. Add a tablespoon of unsalted butter to the pan and spoon it over the chicken for 1–2 minutes to enhance flavor and moisture.
  3. Prepare Garlic Butter Carrots: In a separate skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced carrots, salt, and black pepper. Cook the carrots for 6–8 minutes, stirring occasionally, until they are tender but still retain a slight crunch. Garnish with chopped fresh parsley if desired.
  4. Assemble Plate: Serve the golden garlic herb chicken alongside the cloud-soft mashed potatoes and garlic butter carrots. Garnish with additional fresh parsley for a pop of color and freshness.

Notes

  • You can use chicken thighs for a juicier and more flavorful option or chicken breasts for a leaner meal.
  • Warming the milk before adding to mashed potatoes helps achieve a smoother, creamier texture.
  • For a dairy-free version, substitute butter with olive oil and use a plant-based milk alternative.
  • Adjust seasoning to taste, especially salt and pepper, based on your preference.
  • Fresh herbs can be substituted for dried; use three times the amount if using fresh thyme and rosemary.
  • Rest the cooked chicken for a few minutes before cutting to retain juices.
