Ingredients

Scale

Golden Garlic Herb Chicken

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon unsalted butter

Cloud-Soft Mashed Potatoes

  • 800 g potatoes, peeled and cubed
  • 3 tablespoons unsalted butter
  • ½ cup warm milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garlic Butter Carrots

  • 3 cups carrots, peeled and sliced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Prepare Mashed Potatoes: Boil the peeled and cubed potatoes in salted water for 15–20 minutes until they are fork-tender. Drain the water and mash the potatoes with unsalted butter, warm milk, salt, and pepper until the mixture is smooth and fluffy. Keep the mashed potatoes warm until ready to serve.
  2. Cook Chicken: Season the chicken breasts or thighs with minced garlic, lemon zest and juice, dried thyme, dried rosemary, paprika, salt, and black pepper. Heat olive oil in a skillet over medium heat and cook the chicken for about 5–6 minutes on each side until golden brown and fully cooked through. Add the unsalted butter to the skillet and spoon the melted butter over the chicken for 1–2 minutes to enrich its flavor.
  3. Prepare Garlic Butter Carrots: In a separate skillet, melt the butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Add the sliced carrots, salt, and pepper, then cook for 6–8 minutes until the carrots are tender but still slightly crisp. Stir occasionally for even cooking.
  4. Assemble Plate: Serve the golden garlic herb chicken alongside the cloud-soft mashed potatoes and garlic butter carrots. Garnish with chopped fresh parsley if desired for a fresh burst of color and flavor.

Notes

  • For juicier chicken, let the meat rest for a few minutes after cooking before slicing.
  • You can substitute half-and-half or cream for milk in the mashed potatoes for extra richness.
  • Use fresh herbs instead of dried for more vibrant flavors if available.
  • Adjust seasoning according to taste, especially salt and pepper.
  • To make this dish gluten-free, ensure all seasonings and ingredients used are gluten-free certified.
