Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the ideal temperature for baking the pastries evenly and achieving a golden crust.
  2. Prepare Pastry Base: Cut the puff pastry sheet into rectangular pieces that will fit into your molds or muffin tins. Press each piece gently into the tins, shaping the base and sides to hold the filling.
  3. Mix Almond Filling: In a mixing bowl, combine ground almonds, sugar, whole eggs, egg yolk, lemon zest, and cinnamon. Stir thoroughly until the mixture is smooth and homogenous.
  4. Fill Pastry Shells: Spoon the almond filling evenly into the prepared puff pastry cases, filling them nearly to the top without overfilling.
  5. Bake: Place the filled molds into the preheated oven and bake for 15 to 18 minutes, or until the pastries are puffed up and nicely golden brown.
  6. Cool: Remove the pastries from the oven and allow them to cool completely on a wire rack to set and avoid sogginess.
  7. Prepare Glaze: In a small bowl, mix the powdered sugar and water until smooth to form a thin glaze.
  8. Glaze Pastries: Spread the glaze evenly over the cooled pastries for a sweet, shiny finish. Optionally, drizzle with melted chocolate for extra flavor and decoration.
