  • 1/2 teaspoon vanilla extract
  • 1/4 cup Baileys Irish Cream

  • 1/2 cup heavy whipping cream
  • 4 ounces semisweet chocolate, chopped

    • 1 cup fresh raspberries

  1. Make the chocolate cake crumble: In a food processor, grind the chocolate sandwich cookies into fine crumbs. Alternatively, you can place the cookies in a zip-top bag and crush them with a rolling pin. In a small bowl, combine the cookie crumbs with the melted butter and mix well. Set aside.
  2. Make the Baileys cheesecake filling: Using an electric mixer, beat the softened cream cheese, powdered sugar, cocoa powder, and vanilla extract in a large bowl until smooth and creamy.
  3. Incorporate the Baileys: Stir in the Baileys Irish Cream until well combined.
  4. Fold in the whipped cream: Gently fold the whipped heavy cream into the Baileys cheesecake mixture until just incorporated. Be careful not to overmix.
  5. Assemble the trifle: In a trifle dish or a large bowl, create layers of the chocolate cake crumble, Baileys cheesecake filling, raspberries, and blueberries. Repeat the layers, ending with a layer of cheesecake filling. Drizzle the remaining Baileys Irish Cream over the top.
