Ingredients

Scale

For the Layered Bake

  • 2 large sweet potatoes, peeled and thinly sliced
  • 3 large carrots, peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Maple-Orange Cranberry Drizzle

  • 1/3 cup maple syrup
  • 1/2 cup fresh or dried cranberries
  • 1/4 cup fresh orange juice
  • 1 teaspoon orange zest
  • 1/4 teaspoon ground cinnamon

Optional Toppings

  • Crumbled goat cheese or feta
  • Chopped walnuts or pecans
  • Fresh thyme or parsley

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 190°C (375°F). Lightly grease a baking dish to prevent sticking.
  2. Toss Vegetables with Seasonings: In a large bowl, toss the thinly sliced sweet potatoes and carrots with olive oil, ground cinnamon, ground nutmeg, salt, and black pepper until evenly coated.
  3. Layer Vegetables in Baking Dish: Arrange the seasoned vegetable slices in the baking dish in alternating layers, slightly overlapping each slice to create a beautiful stacked effect.
  4. Bake Covered: Cover the dish with foil and bake for 30 to 35 minutes, or until the sweet potatoes and carrots are tender when pierced with a fork.
  5. Prepare the Maple-Orange Cranberry Drizzle: While the vegetables bake, combine maple syrup, cranberries, fresh orange juice, orange zest, and ground cinnamon in a small saucepan. Simmer over low heat for 5 to 7 minutes until the cranberries soften and the sauce thickens slightly.
  6. Uncover and Add Drizzle: Remove the foil from the baked vegetables and pour half of the maple-orange cranberry drizzle evenly over the top.
  7. Bake Uncovered: Return the dish to the oven uncovered and bake for an additional 10 to 15 minutes until the top is lightly caramelized and golden.
  8. Finish and Garnish: Remove the bake from the oven, drizzle with the remaining sauce, and garnish with optional toppings such as crumbled goat cheese or feta, chopped walnuts or pecans, and fresh thyme or parsley before serving.

Notes

  • If using dried cranberries, consider soaking them in the orange juice beforehand to soften them slightly.
  • You can substitute olive oil with melted coconut oil or avocado oil for a different flavor profile.
  • This dish pairs beautifully with roasted meats or can be enjoyed as a hearty vegetarian main.
  • Make sure to slice the vegetables thinly for even cooking and attractive layering.
  • For a vegan version, omit cheese toppings and use nuts and herbs for garnish.
