Ingredients

Scale

Pastry and Cheese

  • 1 sheet puff pastry, thawed
  • 1 small wheel of brie (or brie wedge)
  • 1 egg (for egg wash)

Fruit and Sweeteners

  • 45 fresh figs, sliced (or 3 tbsp fig jam if out of season)
  • 2 tbsp honey

Garnish and Seasonings

  • ¼ cup pistachios, finely crushed
  • Pinch of sea salt
  • Fresh thyme or rosemary for garnish

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the tart.
  2. Prepare the puff pastry: Roll out the thawed puff pastry sheet onto a baking sheet lined with parchment paper to prevent sticking and make cleanup easy.
  3. Assemble the tart base: Place the brie wheel in the center of the puff pastry. Top the brie evenly with the sliced fresh figs or spread fig jam if fresh figs are unavailable.
  4. Add honey and seasoning: Drizzle 2 tablespoons of honey over the brie and figs, then sprinkle a pinch of sea salt to enhance the flavors.
  5. Shape the tart: Fold the edges of the puff pastry inward around the brie and figs to form a rustic, freeform tart shape, leaving the center exposed.
  6. Apply egg wash: Beat the egg and brush it over the folded puff pastry edges to give them a golden, shiny finish after baking.
  7. Bake the tart: Place the baking sheet in the preheated oven and bake for 18–22 minutes until the pastry is golden brown and the brie is melted and bubbly.
  8. Add final garnish and serve: Remove from the oven and immediately sprinkle the crushed pistachios and fresh thyme or rosemary over the top. Slice the tart and serve warm for the best flavor and texture.

Notes

  • This tart can be served as an elegant appetizer or a special snack.
  • If fresh figs are not in season, fig jam makes a perfect substitute.
  • To make crushing pistachios easier, place them in a sealed bag and gently tap with a rolling pin or use a nut grinder.
  • Use fresh herbs like thyme or rosemary to complement the sweetness and add aromatic freshness.
  • Ensure the puff pastry stays cold before baking for the best rise and flakiness.
