  • 1 cup (240 ml) heavy cream, chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

For the whipped cream topping:

  • 1 cup (240 ml) heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

For garnish:

  • Whole Biscoff cookies
  • Extra cookie crumbs

Instructions

  1. Make the cookie base

    Mix crushed Biscoff cookies with melted butter until sandy in texture. Set aside for layering.

  2. Prepare the mousse

    In a bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form. Fold in Biscoff spread gently until smooth and fluffy.

  3. Prepare the whipped cream topping

    Whip the cream, powdered sugar, and vanilla until stiff peaks form.

  4. Assemble the parfaits

    Add a layer of cookie crumbs to the bottom of each serving glass. Spoon or pipe a layer of Biscoff mousse. Add a layer of whipped cream. Repeat the layers until the glasses are full.

  5. Garnish

    Top with whipped cream, cookie crumbs, and a whole Biscoff cookie for decoration.
