  • 25 Oreo cookies, crushed
  • 1/2 cup (115g) unsalted butter, melted

For the cheesecake filling:

  • 3 (8-ounce) packages full-fat cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120g) sour cream
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature

For the chocolate ganache and cherry topping:

  • 1 cup (170g) semi-sweet chocolate chips
  • 1/2 cup (120ml) heavy cream
  • 1 (21-ounce) can cherry pie filling
  • Fresh cherries with stems for garnish

Instructions

  1. Prepare the crust: Preheat the oven to 175°C (350°F). Mix crushed Oreo cookies and melted butter, press into a 9-inch springform pan, bake, then cool. Reduce oven temperature to 160°C (325°F).
  2. Make the filling: Beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time. Pour over crust.
  3. Bake the cheesecake: Place the pan in a water bath and bake until set. Cool and chill.
  4. Make the ganache: Melt chocolate chips and heavy cream, then pour over chilled cheesecake.
  5. Garnish and serve: Top with cherry pie filling and fresh cherries before slicing and serving.
