Ribeye

  • 2 ribeye steaks (1 inches thick)
  • 1 tbsp olive oil
  • 1½ tbsp blackening seasoning (store-bought or homemade)
  • Salt & black pepper, to taste

Whiskey Glaze (Optional but Recommended)

  • ¼ cup whiskey (bourbon works great)
  • 1 tbsp brown sugar
  • 1 tbsp butter

Sweet Maple Butter

  • 4 tbsp unsalted butter, softened
  • 1½ tbsp pure maple syrup
  • Pinch of sea salt

Instructions

  1. Make Maple Butter: In a small bowl, mix softened unsalted butter, pure maple syrup, and a pinch of sea salt together until smooth and well combined. Chill in the refrigerator until ready to use to allow flavors to meld and the butter to firm up slightly.
  2. Prep Steaks: Pat the ribeye steaks dry using paper towels. Rub each steak evenly with olive oil, then generously coat both sides with blackening seasoning. Season with salt and black pepper to taste.
  3. Sear & Blacken: Heat a cast iron skillet over high heat until it is smoking hot. Carefully place the steaks in the skillet and sear for 3 to 4 minutes per side for medium-rare doneness, adjusting time depending on your preferred level of cook. Remove steaks from skillet and let them rest for 5 minutes to retain their juices.
  4. Whiskey Glaze: Using the same skillet (off heat for safety), add whiskey and brown sugar. Return skillet to low heat and simmer the mixture for about 1 to 2 minutes until it slightly thickens. Swirl in butter until melted and incorporated to create a smooth glaze.
  5. Finish & Serve: Drizzle the warm whiskey glaze over the rested ribeye steaks. Top each steak with a slice of the chilled sweet maple butter, letting it melt over the steak just before serving for a rich, sweet finish.
