Delightful and easy-to-make Blueberry Breakfast Quesadillas featuring creamy sweetened cream cheese and fresh blueberries, perfect for a quick and tasty morning treat.

Ingredients

Scale

Filling

  • 4 oz cream cheese, softened
  • 2 tbsp honey or maple syrup
  • ½ tsp vanilla extract

Quesadillas

  • 4 flour tortillas (8-inch)
  • 1 cup fresh or frozen blueberries
  • 1 tbsp butter

Optional Toppings

  • Powdered sugar, for dusting
  • Greek yogurt or whipped cream, for serving

Instructions

  1. Prepare the filling: In a small bowl, mix the softened cream cheese, honey or maple syrup, and vanilla extract until the mixture is smooth and creamy.
  2. Assemble quesadillas: Spread the cream cheese mixture evenly over two of the flour tortillas. Sprinkle the blueberries evenly on top, then cover each with another tortilla to create two quesadilla sandwiches.
  3. Cook: Heat the butter in a skillet over medium heat. Place one quesadilla in the pan and cook for 2 to 3 minutes on each side, or until the tortillas are golden brown and slightly crispy. Repeat with the second quesadilla.
  4. Slice and serve: Remove the quesadillas from the skillet, cut each into triangles, and dust lightly with powdered sugar if desired. Serve warm with a dollop of Greek yogurt or whipped cream and an optional drizzle of honey for extra indulgence.

Notes

  • Use fresh or frozen blueberries; if frozen, thaw and drain excess water before using.
  • Honey or maple syrup can be adjusted based on desired sweetness.
  • For a healthier option, use whole wheat or low-fat tortillas.
  • Serve immediately to enjoy warm and melty quesadillas.
  • Optional toppings like Greek yogurt or whipped cream add creaminess and balance the tartness of blueberries.
