Honey Lemon Dressing

  • Salt & black pepper, to taste

Instructions

  1. Prepare vegetables: If you prefer softer broccoli, blanch the broccoli florets in boiling water for 1 to 2 minutes. Immediately transfer them to ice water to stop the cooking process, then drain thoroughly to remove excess moisture.
  2. Assemble salad: In a large mixing bowl, combine the fresh baby spinach, chopped broccoli florets, blueberries, thinly sliced red onion, toasted nuts of your choice, and crumbled feta or goat cheese if using. Gently toss to mix the ingredients evenly.
  3. Make dressing: In a small bowl or jar, whisk together the olive oil, fresh lemon juice, honey (or maple syrup), Dijon mustard, salt, and black pepper until the dressing is smooth and emulsified.
  4. Toss & serve: Just before serving, drizzle the honey lemon dressing over the salad. Toss gently to coat all components evenly with the dressing. Serve immediately to enjoy the freshest flavors and textures.
