Meatballs:

  • 1 lb ground beef
  • 6 slices bacon, cooked & crumbled 🥓
  • ¼ cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper, to taste
  • 1 cup shredded cheddar cheese 🧀

Additional:

  • 1 cup BBQ sauce (bourbon-style if you like)
  • 4 sub rolls
  • 2 tbsp butter, melted (for toasting)
  • Optional toppings: pickles, jalapeños, caramelized onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix ground beef, bacon, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until combined.

  3. Roll mixture into medium-sized meatballs.
  4. Place on a baking sheet lined with parchment paper.

  5. Bake 18–20 minutes, until fully cooked.
  6. Toss hot meatballs in BBQ sauce until coated.

  7. Slice sub rolls, brush with butter, and lightly toast in the oven.
  8. Fill rolls with BBQ meatballs, sprinkle cheese, and broil 2–3 minutes until melty.
