Ingredients

Scale

For the Meatloaf:

  • 1.5 lbs (680 g) ground beef
  • ½ lb (225 g) ground pork
  • 1 cup breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Bourbon Glaze:

  • ½ cup ketchup
  • 2 tablespoons bourbon
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat oven: Set your oven to 350°F (175°C) and lightly grease a loaf pan to prevent sticking.
  2. Make the meatloaf mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, finely diced onion, minced garlic, eggs, milk, Worcestershire sauce, salt, and black pepper. Mix gently until just combined to keep the meatloaf tender.
  3. Shape and place in pan: Form the meat mixture into a loaf shape, then place it evenly in the prepared loaf pan for even cooking.
  4. Prepare the bourbon glaze: In a small bowl, whisk together ketchup, bourbon, brown sugar, and Dijon mustard until smooth and well blended.
  5. Glaze the meatloaf: Spread half of the bourbon glaze evenly over the top of the meatloaf, coating it thoroughly for maximum flavor.
  6. Bake: Place the meatloaf in the oven and bake for 50–60 minutes. Halfway through baking, brush the remaining glaze over the top. The meatloaf is done when it reaches an internal temperature of 160°F (71°C).
  7. Rest and serve: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve with extra glaze on the side if desired for added richness.

Notes

  • For best results, do not overmix the meat mixture to keep the meatloaf tender.
  • Use a meat thermometer to ensure the meatloaf reaches the safe internal temperature of 160°F (71°C).
  • You can substitute ground turkey or chicken for a lighter meatloaf option.
  • Allowing the meatloaf to rest before slicing helps retain its juices.
  • For a spicier glaze, add a pinch of cayenne pepper or hot sauce to the glaze mixture.
