Ingredients

Scale

Lemon Dijon Chicken

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Orzo Base

  • 1 cup dry orzo pasta
  • 2 cups low-sodium chicken broth
  • 1 tablespoon olive oil
  • ½ teaspoon salt

Spicy Garlic Feta Yogurt Sauce

  • ¾ cup plain Greek yogurt
  • ½ cup crumbled feta cheese
  • 1 clove garlic, finely grated
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 12 tablespoons warm water (to thin)
  • Pinch of salt

Bowl Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • Extra lemon wedges for serving

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, paprika, salt, and black pepper. Add the chicken breasts and coat them thoroughly with the marinade. Cover and refrigerate for at least 20 minutes, or up to 4 hours for more flavor.
  2. Cook the Orzo: In a saucepan, bring the low-sodium chicken broth to a boil. Add the orzo, olive oil, and salt. Reduce the heat and simmer for 8–10 minutes until the orzo is tender and cooked through. Drain any excess liquid and fluff the orzo with a fork to keep it light and separate.
  3. Cook the Chicken: Heat a skillet over medium-high heat. Remove the chicken from the marinade and cook for about 5–6 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Let the chicken rest for 5 minutes before slicing it into strips.
  4. Prepare the Spicy Garlic Feta Yogurt Sauce: In a bowl, combine Greek yogurt, crumbled feta cheese, finely grated garlic, lemon juice, olive oil, red pepper flakes, and a pinch of salt. Gradually add 1 to 2 tablespoons of warm water to thin the sauce until it is smooth and drizzle-able.
  5. Assemble the Bowls: Divide the cooked orzo evenly into serving bowls. Top with the sliced lemon Dijon chicken, followed by halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  6. Drizzle & Garnish: Spoon generous amounts of the spicy garlic feta yogurt sauce over the bowls. Sprinkle with fresh chopped parsley and serve with extra lemon wedges on the side for added brightness.

Notes

  • Marinate the chicken for at least 20 minutes for flavor, but up to 4 hours for best results.
  • Adjust red pepper flakes in the yogurt sauce according to your spice preference.
  • Use low-sodium chicken broth to better control the overall saltiness of the dish.
  • Serve immediately to enjoy the fresh textures and flavors at their best.
  • Can be made gluten-free by substituting orzo with a gluten-free pasta alternative.
