Dough:

  • 3½ cups (440g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 tsp salt
  • 2¼ tsp (1 packet or 7g) instant dry yeast
  • ½ cup (120ml) warm whole milk
  • 4 large eggs
  • ¾ cup (170g) unsalted butter, softened and cubed

Egg Wash:

  • 1 egg, beaten with 1 tbsp milk

Instructions

  1. Prepare the Dough: Combine warm milk, sugar, and yeast in a mixing bowl. Let sit until frothy. Add eggs, flour, and salt. Mix until a soft dough forms.
  2. Knead the Dough: Knead the dough for about 10 minutes until smooth. Gradually add softened butter, kneading until fully incorporated.
  3. Rise and Chill: Let the dough rise until doubled. Refrigerate for at least 4 hours or overnight.
  4. Shape the Dough: Form into a loaf or braid for traditional brioche. Place in a loaf pan.
  5. Second Rise: Let the dough rise again until doubled.
  6. Egg Wash and Bake: Brush the top with egg wash. Bake at 175°C (350°F) for 30–35 minutes until golden brown.
  7. Cool and Serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can customize your brioche by adding chocolate chips, dried fruits, or nuts to the dough.
  • For a richer flavor, you can use melted butter instead of softened butter in the dough.
