For the filling:

  • 6 apples, peeled, cored, and sliced
  • 1/2 cup unsalted butter, browned
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp cornstarch

For the topping:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar

Instructions

  1. Make the crust: In a large bowl, combine the flour, sugar, and salt. Cut in the cold, cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough comes together. Divide the dough into two disks, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  2. Brown the butter: Melt the butter in a saucepan over medium heat. Stir frequently until it turns golden brown and develops a nutty aroma. Remove from the heat and let it cool slightly to room temperature.
  3. Make the filling: In a large bowl, toss the sliced apples with the browned butter, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch until evenly coated.
  4. Assemble the pie: Preheat your oven to 375°F (190°C). Roll out one dough disk on a floured surface to fit a 9-inch pie pan. Transfer the dough to the pan and press it gently into place. Pour the apple filling into the crust.
  5. Create the lattice topping: Roll out the second dough disk and slice it into even strips. Arrange the strips over the pie in a lattice pattern. Brush the lattice with the beaten egg and sprinkle with coarse sugar to add sparkle and crunch.
