Ingredients

Scale

For the Chicken

  • 1 pound boneless, skinless chicken breast, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

For the Bowl

  • 2 cups cooked brown rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, halved
  • 2 tablespoons fresh parsley, chopped

For the Whipped Garlic Feta

  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons Greek yogurt
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil

Instructions

  1. Cook the Chicken: Heat olive oil in a skillet over medium heat. Add the sliced chicken and season with paprika, garlic powder, dried oregano, salt, and pepper. Cook the chicken for 6 to 8 minutes until golden and fully cooked through.
  2. Prepare the Whipped Garlic Feta: While the chicken cooks, combine the crumbled feta cheese, Greek yogurt, minced garlic, lemon juice, and olive oil in a small food processor or bowl. Blend until smooth and creamy to create the sauce.
  3. Assemble the Bowls: Divide the cooked brown rice evenly into four bowls. Top each bowl with the cooked chicken slices, cherry tomatoes, diced cucumber, thinly sliced red onion, and halved kalamata olives.
  4. Add the Whipped Garlic Feta and Garnish: Drizzle or dollop the whipped garlic feta over the assembled bowls. Finish by sprinkling fresh chopped parsley on top for a burst of color and flavor.

Notes

  • You can substitute chicken thighs for chicken breast if you prefer a juicier cut.

  • For a vegetarian version, replace the chicken with grilled halloumi or roasted chickpeas.
  • Use leftover cooked brown rice to save prep time.
