  • 1 ball fresh burrata (125–150g)
  • 3 ripe dark plums, halved and pitted
  • 1 tbsp olive oil (plus more for drizzling)
  • 2 tsp honey or maple syrup
  • Pinch of flaky salt

Topping

  • 2 tbsp shelled pistachios, toasted and crushed
  • 1 tsp fresh thyme leaves
  • Cracked black pepper

To Serve

  • Grilled sourdough or seeded crackers
  • Optional: balsamic glaze or lemon zest

Instructions

  1. Preheat oven: Preheat oven to 200°C (390°F). Toss plum halves with olive oil and honey. Place cut-side up on a baking tray.
  2. Roast plums: Roast for 18–20 minutes until bubbling, soft, and caramelized around the edges. Let cool slightly.
  3. Arrange: Place burrata in the center of a shallow serving plate. Arrange warm roasted plums around it.
  4. Finish: Drizzle lightly with olive oil. Top with crushed pistachios, thyme, and black pepper.
  5. Serve: Serve immediately with warm bread or crackers to scoop up everything.
