Instructions

  1. Toast Pecans: In a medium skillet over medium heat, melt the butter and add the chopped pecans. Cook them until they become fragrant and lightly toasted, stirring frequently to prevent burning. Remove from heat and allow to cool completely.
  2. Prepare Ice Cream Base: In a saucepan, combine the heavy cream, whole milk, brown sugar, and a pinch of salt. Heat over medium heat, stirring occasionally until the sugar fully dissolves. Remove from heat and let the mixture cool completely to room temperature.
  3. Add Vanilla: Once the cream mixture has cooled, stir in the vanilla extract evenly throughout the base.
  4. Churn Ice Cream: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, about 20-25 minutes, until it thickens to a soft-serve texture. During the last few minutes of churning, add the toasted pecans to incorporate them evenly.
  5. Freeze to Set: Transfer the churned ice cream into an airtight container and freeze for at least 2 hours to firm up before serving.

  • For extra crunch, reserve some toasted pecans to sprinkle on top when serving.
