Dry Ingredients:

  • All-purpose flour – 2 ½ cups (310g)
  • Baking powder – 2 ½ tsp
  • Baking soda – ½ tsp
  • Salt – ½ tsp

Wet Ingredients:

  • Unsalted butter – 1 cup (225g), softened
  • Granulated sugar – 1 ¾ cups (350g)
  • Eggs – 4 large, at room temperature
  • Vanilla extract – 2 tsp
  • Buttermilk – 1 cup (240ml), at room temperature

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and prepare two 8-inch (20cm) round cake pans by greasing and lining them.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat butter and sugar until pale and fluffy. Add eggs one at a time, mixing well after each addition; then stir in the vanilla.
  4. Combine Ingredients: Add the dry ingredients in three parts, alternating with the buttermilk in two parts (starting and ending with dry). Mix gently until just combined—do not overmix.
  5. Bake the Cakes: Divide the batter evenly between the prepared pans, smooth the tops, and bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and Frost: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
