Honey Lime Shrimp

  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 2 garlic cloves, minced
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper

Rice Layer

  • 1 ½ cups cooked jasmine or basmati rice
  • Juice of ½ lime
  • 1 tbsp chopped fresh cilantro
  • Pinch of salt

Avocado Layer

  • 2 ripe avocados, diced
  • 1 tbsp lime juice
  • Pinch of salt
  • 1 tbsp finely diced red onion

Cilantro Lime Sauce

  • ½ cup Greek yogurt
  • ¼ cup mayonnaise
  • 1 cup fresh cilantro
  • 1 garlic clove
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 12 tbsp water (to thin)

Optional Garnish

  • Cherry tomatoes, diced
  • Extra cilantro
  • Lime wedges
  • Crushed tortilla chips for crunch

Instructions

  1. Marinate the Shrimp: In a bowl, whisk together olive oil, honey, lime juice, garlic, smoked paprika, chili powder, salt, and black pepper. Add the peeled and deveined shrimp and toss to coat evenly. Let it marinate for 15 to 20 minutes to absorb the flavors.
  2. Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2 to 3 minutes on each side until they turn pink and slightly caramelized. Remove from heat and set aside.
  3. Prepare the Rice: In a bowl, mix warm cooked jasmine or basmati rice with fresh lime juice, chopped cilantro, and a pinch of salt. Stir gently to combine and keep the rice fluffy.
  4. Prepare the Avocado Layer: Gently toss the diced ripe avocados with lime juice, a pinch of salt, and finely diced red onion. This ensures the avocado stays fresh and flavorful without browning quickly.
  5. Make the Cilantro Lime Sauce: In a blender or food processor, combine Greek yogurt, mayonnaise, fresh cilantro, garlic, lime juice, olive oil, salt, and pepper. Blend until smooth. Add 1 tablespoon of water at a time to thin the sauce to a drizzle-able consistency.
  6. Assemble the Stack: Using a food ring mold or carefully freehanding, layer the cilantro lime rice at the bottom, followed by the avocado mixture, and top with the honey lime shrimp. Press lightly between each layer to keep the stack firm and structured.
  7. Finish & Serve: Drizzle generously with the cilantro lime sauce. Garnish with optional diced cherry tomatoes, extra cilantro, lime wedges, or crushed tortilla chips for additional texture and flavor. Carefully remove the mold and serve immediately for the best presentation and freshness.
