Ingredients

Scale

For the Honey Lime Shrimp:

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp honey
  • Zest and juice of 1 lime
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

For the Rice Stack:

  • 2 cups cooked jasmine or basmati rice
  • 1 tsp lime juice
  • Salt, to taste

For the Avocado Layer:

  • 1 ripe avocado, diced
  • 1 tsp lime juice
  • Pinch of salt

For the Cilantro Lime Sauce:

  • 1/4 cup fresh cilantro
  • 2 tbsp Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp olive oil
  • Salt, to taste
  • Optional: 1 small clove garlic

Optional Garnish:

  • Extra lime wedges
  • Chili flakes
  • Fresh cilantro

Instructions

  1. Marinate the Shrimp: In a bowl, whisk together olive oil, honey, lime zest, lime juice, minced garlic, salt, and black pepper. Add the shrimp and toss until well coated. Let it marinate for 10 minutes to infuse flavors.
  2. Cook the Shrimp: Heat a skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes per side until they turn pink and are cooked through. Remove from heat and set aside.
  3. Prepare the Rice: In a bowl, toss the cooked jasmine or basmati rice with lime juice and salt to taste. This will add a subtle citrus flavor to the rice base.
  4. Make the Cilantro Lime Sauce: In a blender or food processor, combine fresh cilantro, Greek yogurt, lime juice, olive oil, garlic (if using), and salt. Blend until smooth and creamy.
  5. Prepare the Avocado Layer: Dice the ripe avocado and toss gently with lime juice and a pinch of salt to prevent browning and enhance flavor.
  6. Assemble the Stacks: On serving plates, layer the lime-infused rice first, top with cooked shrimp, then add the avocado layer on top. Drizzle generously with the cilantro lime sauce.
  7. Garnish and Serve: Garnish with extra cilantro, lime wedges, or chili flakes as desired. Serve immediately for the best fresh flavors.

Notes

  • Use fresh lime juice for the best flavor in all components of the dish.
  • Adjust the honey in the shrimp marinade to make it sweeter or more tangy based on preference.
  • If you prefer a spicier kick, add chili flakes either in the shrimp marinade or as garnish.
  • To make the dish gluten-free, ensure that any added ingredients like soy sauce (if substituted) are gluten-free.
  • Leftover rice works great for this recipe and speeds up prep time.
  • The cilantro lime sauce can be made ahead and stored in the fridge for up to 2 days.
