  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • ⅓ cup (35g) unsweetened cocoa powder
  • ½ cup (60g) all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder

For the Creamy Cheesecake Layer:

  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Caramel Swirl:

  • ½ cup (120ml) thick caramel sauce (plus extra for drizzling)
  • Pinch of flaky sea salt (optional, for a sweet-and-salty finish)

Instructions

  1. Preheat & Prep the Pan: Preheat oven to 325°F (163°C). Line a 9-inch springform pan with parchment paper and grease the sides.
  2. Make the Brownie Base: Whisk melted butter and sugar. Add eggs, cocoa powder, then fold in flour, salt, and baking powder.
  3. Bake the Brownie Layer: Spread batter in the pan and bake for 15 minutes.
  4. Prepare the Cheesecake Mixture: Beat cream cheese and sugar, add eggs, and vanilla.
  5. Assemble & Swirl: Pour cheesecake mixture over brownie base, add dollops of caramel, and swirl gently.
  6. Finish Baking: Bake for 40–45 minutes until mostly set.
  7. Cool & Chill: Cool at room temperature, then refrigerate for at least 4 hours or overnight.
