  • 1 egg, beaten (for egg wash) 🥚

Filling

  • 2 medium sweet potatoes 🍠, peeled and thinly sliced
  • 2 medium onions 🧅, thinly sliced
  • 1 tbsp butter 🧈
  • 1 tbsp olive oil 🫒
  • 100 g feta cheese 🧀, crumbled
  • 1 tsp fresh thyme leaves 🌿
  • Salt & pepper to taste

Instructions

  1. Caramelize the Onions 🧅 – Heat butter and olive oil in a pan over medium heat. Cook onions with a pinch of salt for 20–25 min until golden and sweet.
  2. Roast the Sweet Potato 🍠 – Preheat oven to 200°C (400°F). Toss slices with olive oil, salt, and pepper. Roast 15 min until just tender.
  3. Prepare the Pastry 🥐 – Roll out puff pastry on parchment. Spread onions in the center, leaving a border.
  4. Layer & Season 🌟 – Arrange roasted sweet potato over onions, crumble feta on top, sprinkle thyme leaves.
  5. Fold & Brush 🔄 – Fold pastry edges over filling, pleating as you go. Brush edges with beaten egg.
  6. Bake 🔥 – Bake 25–30 min until pastry is golden brown. Serve warm.
