  • 1 tablespoon water or orange juice (15 ml)

  • Chopped fresh parsley or thyme

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish to prevent the vegetables from sticking during baking.
  2. Layer the Vegetables: Begin layering the thinly sliced sweet potato, butternut squash, and carrots in the baking dish. After placing each layer, brush lightly with olive oil and season with salt, black pepper, and cinnamon if using. This ensures each layer is flavorful.
  3. Bake Covered: Cover the baking dish with foil to trap steam and bake the layered vegetables in the preheated oven for 25 to 30 minutes, or until the vegetables are tender when pierced with a fork.
  4. Prepare Cranberry-Honey Drizzle: While the vegetables are baking, combine the dried cranberries, honey, and water or orange juice in a small saucepan. Simmer gently for 3 to 5 minutes until the mixture thickens slightly and the cranberries soften.
  5. Serve: Once the vegetables are tender, remove the bake from the oven, discard the foil, and drizzle the warm cranberry-honey sauce evenly over the top. Garnish with chopped fresh parsley or thyme if desired before serving.
