  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup unsalted butter, softened
  • 3/4 cup milk
  • 1 large egg
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)

Cream Cheese Frosting:

  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add the softened butter, milk, and egg to the dry ingredients. Mix until just combined. Fold in the grated carrots and chopped nuts, if using.
  4. On a lightly floured surface, roll out the dough into a rectangle about 1/4 inch thick.
  5. Spread a thin layer of softened butter over the dough. Sprinkle with additional cinnamon and sugar if desired.
  6. Starting from one long edge, carefully roll the dough into a tight log. Slice the log into 12 equal pieces and place them in the prepared baking dish.
  7. Bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
  8. While the rolls are baking, prepare the cream cheese frosting.
  9. In a mixing bowl, beat together the cream cheese and butter until smooth.
  10. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  11. Adjust the consistency with milk as needed.
  12. Once the rolls are out of the oven, let them cool slightly before spreading the cream cheese frosting on top.
