Cake:

  • ½ tsp salt
  • 1 ½ cups grated carrots 🥕
  • ½ cup chopped walnuts (optional) 🌰

Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened 🧈
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and grease it.
  2. Beat eggs, sugar, oil, and vanilla until thick and pale. Sift flour, baking powder, cinnamon, and salt. Gradually fold into egg mixture.
  3. Fold in grated carrots and walnuts. Spread batter evenly in the pan. Bake 15-18 minutes or until springy to touch.
  4. While warm, invert cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment paper and roll cake gently with the towel. Cool completely.
  5. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Mix well.
  6. Unroll cooled cake, spread frosting evenly, then roll back up tightly without towel.
  7. Chill before slicing.
