For the Chicken
- 2 cups cooked chicken breast, grilled or pan-seared and diced

For Garnish

- Prepare the Honey Lime Chicken: In a bowl, whisk together honey, fresh lime juice, lime zest, and chili flakes if using. While the chicken is warm, toss it in the honey-lime mixture until evenly coated.
- Make the Yogurt Sauce: In a small bowl, combine Greek yogurt, lemon or lime juice, olive oil, grated garlic, and salt. Stir until smooth and creamy.
- Assemble the Stacks: On each plate, start with a base layer of roasted cauliflower rice, then add the honey-lime chicken, followed by slices of ripe avocado. Spoon a generous amount of the yogurt sauce on top.
