For the Cauliflower Rice

  • 1 small head cauliflower, riced (about 4 cups)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp smoked paprika

For the Yogurt Sauce

  • 1/2 cup Greek yogurt
  • 1 tbsp fresh lemon or lime juice
  • 1 tbsp olive oil
  • 1 small clove garlic, grated
  • Salt, to taste

For Garnish

  • Fresh cilantro or parsley, chopped
  • 1 ripe avocado, sliced

Instructions

  1. Roast the Cauliflower Rice: Preheat the oven to 425°F (220°C). Toss the riced cauliflower with olive oil, smoked paprika, salt, and pepper. Spread evenly on a baking sheet and roast for 15–18 minutes, stirring halfway through, until it turns lightly golden and fragrant.
  2. Prepare the Honey Lime Chicken: In a bowl, whisk together honey, fresh lime juice, lime zest, and chili flakes if using. While the chicken is warm, toss it in the honey-lime mixture until evenly coated.
  3. Make the Yogurt Sauce: In a small bowl, combine Greek yogurt, lemon or lime juice, olive oil, grated garlic, and salt. Stir until smooth and creamy.
  4. Assemble the Stacks: On each plate, start with a base layer of roasted cauliflower rice, then add the honey-lime chicken, followed by slices of ripe avocado. Spoon a generous amount of the yogurt sauce on top.
  5. Garnish and Serve: Finish the dish with freshly chopped cilantro or parsley. Serve warm for best flavor and texture.
