These Cheesy Garlic Butter Rollups are a delicious twist on classic garlic bread. Soft, pillowy rolls filled with gooey cheese and flavorful garlic butter, they are perfect as a snack, appetizer, or side dish.

For the Dough:

  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 tsp sugar
  • ¾ tsp salt
  • ¾ cup warm water
  • 2 tbsp olive oil

For the Filling:

  • 2 cups shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • 4 tbsp unsalted butter, melted
  • 3 garlic cloves, minced
  • 2 tbsp chopped fresh parsley
  • ½ tsp dried oregano
  • Pinch of salt

Instructions

  1. Make the Dough (Skip if using ready-made): In a large bowl, combine flour, yeast, sugar, and salt. Add warm water and olive oil. Stir until a dough forms, then knead on a floured surface for 5–7 minutes until smooth. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  2. Prepare the Garlic Butter: In a small bowl, mix melted butter, minced garlic, parsley, oregano, and a pinch of salt. Set aside.
  3. Roll and Fill: On a floured surface, roll out the dough into a rectangle (about 9×13 inches). Brush generously with the garlic butter. Sprinkle mozzarella and parmesan evenly over the top.
  4. Roll and Slice: Starting from the long edge, roll the dough tightly into a log. Slice into 1½-inch pieces (about 10–12 rolls).
  5. Bake: Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper or grease a muffin tin. Place the rolls cut-side up. Bake for 18–22 minutes, or until golden and bubbly.
  6. Garnish and Serve: Remove from oven and brush with any remaining garlic butter. Sprinkle extra parsley on top for that fresh finish. Serve warm and enjoy every gooey bite!
