Meatloaf:

  • 2 lbs (900g) ground beef
  • 1 cup (100g) breadcrumbs
  • 1/2 cup (120ml) milk
  • 1 egg
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Topping:

  • 2 cups (200g) shredded cheddar cheese
  • 12 fresh jalapeños, sliced

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a loaf pan.
  2. Mix Ingredients: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, bell pepper, garlic powder, paprika, salt, and pepper. Mix well.
  3. Shape and Bake: Shape the meat mixture into a loaf and place it in the pan. Bake for 40 minutes.
  4. Add Toppings: Remove from oven, top with shredded cheddar cheese and jalapeño slices.
  5. Final Bake: Bake for an additional 10-15 minutes until cheese is melted and bubbly.
