Stuffed Baguette

  • 1 large baguette
  • 2 tablespoons olive oil (30 ml)
  • 1 cup mushrooms, finely chopped (150 g)
  • 1 cup spinach, chopped (30 g)
  • 1 cup canned artichoke hearts, drained and chopped (150 g)
  • 4 oz cream cheese, softened (115 g)
  • 1/2 cup shredded mozzarella cheese (60 g)
  • 1/4 cup grated Parmesan cheese (25 g)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt (3 g)
  • 1/4 teaspoon black pepper (1 g)

Optional Topping

  • Extra mozzarella or Parmesan cheese, for topping
  • Fresh parsley, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready to bake the stuffed baguette to golden perfection.
  2. Prepare Baguette: Slice the baguette lengthwise and carefully hollow out some of the interior to create space for the filling without cutting all the way through.
  3. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add chopped mushrooms and cook until they become soft and release their moisture. Add minced garlic and chopped spinach, sautéing until the spinach wilts and the mixture is fragrant.
  4. Mix Filling: In a bowl, combine the sautéed mushrooms, spinach, chopped artichoke hearts, softened cream cheese, shredded mozzarella, grated Parmesan, salt, and black pepper. Mix thoroughly to blend all ingredients evenly.
  5. Fill Baguette: Spoon the cheese and vegetable mixture evenly into the hollowed-out baguette. Smooth the filling and top with extra mozzarella or Parmesan cheese if desired for a cheesy crust.
  6. Bake: Place the stuffed baguette on a baking sheet and bake in the preheated oven for 20–25 minutes, or until the cheese is bubbly and the top is golden brown.
