Cake Layers:

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter

Filling and Topping:

  • 2 cups cherry pie filling
  • 1/2 cup sliced almonds, toasted

Instructions

  1. Prepare the Crust: Combine graham cracker crumbs with melted butter, press firmly into the base of a springform pan, and chill for 15 minutes.
  2. Make the Cream Cheese Mixture: Beat the cream cheese and granulated sugar until smooth.
  3. Whip the Cream: In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  4. Combine Cream and Cheese: Gently fold the whipped cream into the cream cheese mixture.
  5. Layer the Cake: Spread half of the cream mixture over the chilled crust. Spoon half of the cherry pie filling over the cream layer. Repeat with the remaining cream mixture and top with the rest of the cherry pie filling.
  6. Chill: Refrigerate the cake for at least 4 hours or overnight.
