  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

For the Cherry Topping:

  • 2 cups fresh or canned cherries (pitted)
  • 1/2 cup cherry preserves
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Crust: Preheat oven to 325°F (160°C). Grease a 9-inch springform pan. Mix graham cracker crumbs, melted butter, and sugar. Press into pan and bake for 10 minutes.
  2. Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in lemon juice, lemon zest, and vanilla. Pour over cooled crust.
  3. Bake: Bake for 50–55 minutes. Cool in the oven, then refrigerate for at least 4 hours.
  4. Prepare the Cherry Topping: Combine cherries, cherry preserves, and lemon juice in a saucepan. Cook until warm and glossy. Cool before spreading over cheesecake.
  5. Serve: Slice and serve chilled, garnished with lemon zest.
