Chocolate Base

  • 150 g chocolate biscuits (Oreo or Digestive)
  • 70 g melted butter

Mousse Layer

  • 250 ml heavy cream (chilled)
  • 200 g cream cheese (softened)
  • 80 g powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 1½ tsp gelatin powder + 2 tbsp hot water

Cherry Jelly Topping

  • 200 ml cherry juice (or blend fresh cherries)
  • 2 tbsp sugar (adjust to sweetness)
  • 1½ tsp gelatin powder + 2 tbsp hot water

Decoration

  • Fresh cherries
  • Mint leaves
  • Edible gold flakes or chocolate decorations
  • (Optional) Edible gold butterfly for a royal finish

Instructions

  1. Make the base – Crush biscuits into fine crumbs. Mix with melted butter until combined. Press into the bottom of a round mold. Chill for 15 minutes.
  2. Prepare mousse layer – Whip heavy cream until stiff peaks form. In another bowl, beat cream cheese, powdered sugar, vanilla, and milk until smooth. Add dissolved gelatin and mix well. Fold in whipped cream gently. Spread mousse over the chilled base. Refrigerate 1 hour.
  3. Make cherry jelly topping – Heat cherry juice with sugar until warm. Add dissolved gelatin, stir until smooth. Let cool slightly, then pour gently over mousse layer. Refrigerate for 2–3 hours until fully set.
  4. Decorate & serve – Top with fresh cherries, mint leaves, and edible gold. Add a chocolate or gold butterfly for a stunning presentation.

  • Use high-quality cherry juice for a deep, fruity flavor.
  • For a stronger taste, fold chopped cherries into the mousse layer.
